Pepper Tomato Sauce

Pasta

• 3 large Italian sausages

• 1 onion

• 1 red pepper

• 1 can tomato paste

• 1 large can San Marzano tomatoes

• Salt, fennel seed, and oregano

Sautee sausages until brown, remove, add diced onions and pepper and sautee until sweating, season with salt, fennel seed, and oregano. Add tomato paste, cook until it starts to stick. Deglaze. Add canned tomatoes, ad 3/4 can of water, add back sausages, stir, cover, medium high for 20 mins. Remove sausages, blend sauce with immersion blender.
